Look I know you all want this fucking meatloaf recipe by now
Okay preheat your goddamn oven to 350F (177C)
Take one pound of ground beef (it can be up to, like, 1/4 ground pork or veal if you want) and put it in a nice big bowl
Put also into that bowl one egg yolk, 1 tablespoon breadcrumbs, 1 tablespoon lemon juice (like I measured that shit, I just cut off a chunk and juiced it), 2 tablespoons chopped parsley (ditto, wing it), about half a medium-sized onion grated (or chop it really fine, idgaf), 1 tablespoon of soft butter, 1 teaspoon salt, 1/2 teaspoon pepper, then sort of gently mix it up with a fork. You want it to be as fluffy as a meat-based concoction can possibly be. Don’t manhandle it too much.
Then, if you’re me, lightly grease a normal sized loaf pan and drizzle ketchup all over the bottom, then pat the meat mixture down in the pan and be horrified that it only fills it halfway. Put it in the oven for about 45 minutes, maybe basting it with some stock a couple times until you realize that a huge amount of fat is cooking off it and frankly basting it is unnecessary and ridiculous.
Alternatively, you could double the recipe and make sure you cooked it thoroughly, or you could use a loaf pan about half the size, which is probably what you’re supposed to do but I was too lazy to read the entire Joy of Cooking section on making meatloaf and went straight to the individual recipes. Oh or you could shape it into a freestanding loaf in the middle of a big deep baking pan so the fat has somewhere to go, and put the ketchup on top. Whatever.
